Kathy Simon

Kathy Sue Simon, a.k.a. “Kat”, age 65, passed away unexpectedly at her home on Thursday, March 24, 2022.  Kathy was born on October 27, 1956, to Dick and Gladys (Earls) Levy in Chula Vista, CA.  Her mother, Gladys, survives.  She met Chuck Simon, and the two exchanged marriage vows on November 12, 2003, in California.  Sadly, he preceded her in death on October 27, 2019.

Kathy worked in the food industry most of her adult life and had retired from the bakery department at County Market.  She loved baking and was very good at it!  Kathy and Chuck would grow vegetables in their garden and harvest them for canning.  She was also an animal lover, especially horses and cats. Her fur baby, Jumper, will be lost without her, as Jumper was her loving companion after losing Chuck. Kathy’s family lovingly referred her to their “beloved kat”.  She will be sadly missed, but always in the hearts of her family and friends.

Kathy is survived by her mother: Gladys (Calvin) Melton, children: Chris, Brian (Jackie) and Nick (Kristen) Simon, grandson: Oliver, sister: Vicki Bright, brother: Michael (Karen) Levy, sister-in-law: Jeanne (Randy) Lambrecht and nephews: Dustin and Michael Herzog.  She was preceded in death by her father: Dick Levy, husband: Chuck Simon, brother: Allen Levy and in-laws: Richard and Beverly Simon.

Per family request, no services will be held.
